We are looking for an enthusiastic, experienced, and hands-on Restaurant & Bar Manager to lead the day-to-day operation of our food and beverage department. This is not a desk-based management role. We are looking for someone who leads by example, enjoys being on the restaurant floor, and thrives in a fast-paced hospitality environment.

About the Role

As Restaurant & Bar Manager, you will be responsible for the smooth daily operation of our restaurant, bar, private dining, afternoon tea service, and events. You will ensure exceptional service standards while motivating and developing your team to deliver memorable experiences for every guest. Working closely with the Head Chef and senior management, you will play a key role in maintaining our AA Rosette standards, driving revenue, controlling costs, and ensuring the highest levels of guest satisfaction.

Key Responsibilities

  • Lead the daily operation of the restaurant, bar, lounges, terrace, and private dining areas.
  • Be fully hands-on during service, supporting the team on the floor and behind the bar where required.
  • Deliver exceptional guest service at every stage of the customer journey.
  • Manage, coach, and inspire the food and beverage team.
  • Organise staff rotas and ensure appropriate staffing levels.
  • Oversee afternoon tea, weddings, private dining, celebrations, and corporate events.
  • Maintain excellent communication with the kitchen to ensure smooth service.
  • Ensure all service standards and presentation meet the expectations of a luxury country house hotel.
  • Monitor stock levels, complete stock takes, and control beverage costs.
  • Maximise sales through effective upselling and team training.
  • Handle guest feedback professionally and resolve any issues promptly.
  • Ensure compliance with food safety, licensing, and health & safety regulations.
  • Support the recruitment, onboarding, and development of new team members.

About You

We're looking for someone who:

  • Has previous experience managing a restaurant and bar within a quality hotel or fine dining environment.
  • Is a confident leader who enjoys motivating and developing a team.
  • Leads by example and isn't afraid to roll up their sleeves during busy services.
  • Has excellent food, wine, cocktail, and beverage knowledge.
  • Is passionate about delivering outstanding hospitality.
  • Is highly organised and able to manage multiple priorities.
  • Has excellent communication and problem-solving skills.
  • Is flexible and willing to work evenings, weekends, and holidays as required.
  • Previous experience with weddings and events would be an advantage.
