Cocktail Bar Manager – Mother & 45:33

Opening in Belfast this year, Mother and 45:33 will be two distinctive new cocktail-led venues, each with its own style, atmosphere and offering.

Mother will be an innovative and stylish cocktail bar featuring a roof terrace, dispense bar and regular DJs.

45:33 will be an intimate listening bar with a conceptual cocktail list, a high-fidelity sound system and a curated DJ programme.

While the venues will operate independently, they will work closely together on production.

We are looking for an experienced Cocktail Bar Manager to oversee both venues, help bring their individual concepts to life and lead the teams from opening onwards.

The role

This is a senior, hands-on management position with responsibility for the successful opening and ongoing operation of both bars. As Cocktail Bar Manager, you will lead from the floor, build knowledgeable and confident teams, shape a memorable guest experience and ensure both venues operate smoothly.

What you’ll do:

• Support the pre-opening planning and successful launch of both Mother and 45:33

• Oversee day-to-day operations across both venues, ensuring smooth service, clear communication and consistently high standards

• Protect the distinct identity and guest experience of each bar while creating effective shared systems for cocktail production and quality control

• Recruit, train, coach and motivate skilled bar teams who reflect the culture and standards of each venue

• Lead by example during service and create a welcoming, knowledgeable and professional approach to customer care

• Manage rotas, labour costs, stock, ordering, wastage and margins to achieve agreed budgets and KPIs

• Ensure full compliance with licensing, health and safety, food safety and hygiene requirements

About you:

• At least 2 years’ management experience in a similar cocktail-led bar or premium hospitality environment

• Strong cocktail knowledge

• A proven track record of leading, training and developing high-performing bar teams

• Commercial awareness, including experience of labour management, stock control, margins and cost management

• A hands‑on leader who is confident working across two venues with distinct concepts and operational needs

• A passion for exceptional customer experiences, creative drinks and detail‑led service

• Excellent communication, organisational and problem-solving skills

• An understanding and appreciation of Belfast’s nightlife, cocktail and music scene

• Flexibility to work evenings, weekends and holidays
