An amazing opportunity! Bayley & Sage is a small group of 14 independent stores filling the fridges and hearts of local communities across South West London. We are true foodies who love talking about food, finding amazing products, and taking pride in producing superb food from our Central Production Kitchen. Our production kitchen is at the heart of our meals, sandwiches and salads. We are looking for an experienced chef and leader to bring their passion, standards and organisation to our team. We’re seeking a strong, hands-on leader to run our Central Production Unit (CPU) and ensure Bayley & Sage continues to deliver exceptional quality food to our stores. This role will work very closely with the Technical Manager and report to the Development Director.
Responsibilities
- Lead and manage the Central Production Unit (CPU) to ensure consistent, high-quality products for all stores.
- Work closely with the Technical Manager and report to the Development Director.
- Provide strong leadership, standards and organisation to the production team.
What you\\\’ll need
- Experience: At least 10 years, proven background in managing a production kitchen, large restaurant or hotel kitchen in a premium fresh food environment. It is essential that you have managed a large team and were responsible for the commercial success of a business unit, restaurant or outlet. Experience in finding talent and growing individuals to retain them within the organisation.
- Knowledge: A culinary qualification is essential. Strong understanding of food safety, HACCP, allergens, labelling, and compliance.
- Leadership: A natural people manager with experience leading, training and developing teams to high performance and engagement.
- Organisation: Excellent planning, rostering and scheduling skills, with the ability to manage budgets, labour and wastage effectively.
- Quality focus: Passionate about food and committed to delivering consistent, high-quality products at scale.
- Communication: Clear, confident communicator who can work across departments (Buying, Technical, Retail) and with suppliers.
- Problem-solving: Calm under pressure with a proactive, get it right first time approach.
