Dans le cadre de sa compétence Santé et Nutrition, la Communauté de communes du Bassin de Pompey s’est dotée d’une Cuisine Centrale intercommunale exploitée en régie directe. Plus de 500 000 repas ont été produits en 2023, à partir de matière première de qualité, issue à 30% d’approvisionnements en circuit-court.
Responsibilities
- Eplucher et émincer les légumes
- Préparer les entrées froides sous le contrôle des cuisiniers
- Préparer les repas des crèches
- Peser et allotir après la fabrication
- Participer au conditionnement et au déconditionnement des denrées
- Assurer l’entretien du matériel de cuisine
- Participer au nettoyage de la vaisselle, du matériel de cuisine et des locaux
- Veiller au respect des règles de sécurité et d’hygiène alimentaires dans le cadre des méthodes HACCP
Occasional Missions
- Participer aux animations autour de la nutrition
Qualifications
- BEP ou CAP Cuisine exigé et expérience souhaitée en restauration collective
- Connaître les techniques culinaires en restauration collective
- Maîtrise des règles d’hygiène générale et alimentaire (méthode HACCP)
- Connaître et savoir mettre en œuvre les règles de tenue d’une régie
- Capacités à produire un travail fiable et régulier, à travailler en équipe, à être réactif et disponible
- Permis B exigé
Working Conditions
Durée hebdomadaire de 35h30 du lundi au vendredi de 6h30 à 14h.
