The Bartender owns the bar's readiness, exact beverage execution, service pace, stock accuracy, legal compliance and close. The role prepares approved bar beverages to recipe, protects the 5-minute beverage target, maintains accurate inventory/waste records and escalates equipment, safety or supply failures without creating workarounds.

Key Performance Areas (KPAs)
- Bar Readiness
- Open the bar fully: cleanliness, par, glassware, tools, refrigeration/equipment and POS readiness before service.
- Beverage Quality & Service Pace
- Prepare every approved beverage exactly to the current recipe and presentation standard.
- Deliver bar output through the approved service flow and protect the 5-minute beverage target.
- Use approved pairings and natural upselling without altering product standards.
- Stock, Waste & Cost Control
- Maintain stock/par and record consumption, inventory and waste accurately in the approved system.
- Follow RM-PIN and reason-code controls for voids/discounts; never create an unofficial workaround.
- Legal, Hygiene & Safety
- Maintain approved storage temperatures, hygiene and beverage safety.
- Comply with the approved local alcohol/legal overlay for the market.
- Escalate equipment, technology, safety and supply failures through the correct playbook/manager route.
- Close & Team Coordination
- Close the bar, store stock and clean equipment/bar to standard with required Shift Leader/RM verification.
- Coordinate with Waiters and Runners while preserving the rule that Runner owns soft- drink preparation.
To earn Shift Leader:
- Assignment Policy: Complete at least one year as a Bartender before permanent promotion unless an approved People OS exception applies; complete the Shift Leader Development Plan.
- Swiss Butter Academy: Maintain current Bartender certification and complete Shift Leader learning, practical assessment and certification before independent Shift Leader duty.
- Performance: Meet the published People OS promotion performance gate for the relevant cycle.
- Dual 80 Principle: Demonstrate at least 80% readiness against the destination-role Responsibility Register, with a named successor at least 80% ready against your current role where a permanent promotion is involved.
- Culture: Hold current culture-gate evidence and demonstrate the 5 H's consistently: hunger, hustle, humility, hardiness, heart.
- Role Availability & Approval: The destination role must be approved/open and the verified promotion or transfer pack must receive the required approval.
Additional Responsibilities & Reporting
- Undertake responsibilities assigned by the Direct Supervisor.
- Have working knowledge of standard beverage preparation and basic bar mathematics/cash controls.
- Be able to communicate clearly, multi-task under pressure and follow workplace safety requirements.
- Complete the current Bartender Academy and practical certification before independent assignment.
Key Performance Indicators (KPIs)
- Bar is fully ready before service and by the approved T-15 readiness gate.
- Approved beverages are produced exactly to recipe/presentation standard and within the 5-minute service target.
- Inventory, consumption and waste records are complete and accurate.
- 100% compliance with local alcohol
