Opportunity: An exciting opportunity to join the opening team of an ambitious new wine bar and restaurant.
Overview: The concept blends southern European wine bar culture with a West London mews setting, offering a creative, cultural and community hub featuring rare wines, ingredient-led cooking, art, music, poetry and design.
What We Are Building:
- Concept: Inspired by Southern European wine bar culture with a generous outdoor space for dining and drinking, combining wine, food, and culture.
- People: A team guided by co-founders Elliot Milne and Alex Price, bringing deep hospitality, wine, and operations experience.
- Wine: A thoughtful program exploring classic old world estates and new age independent winemakers, with low-intervention, sustainable farming and a diverse global selection.

Who We Are Looking For:
- Passionate: A team that loves hospitality, wine and food with a curiosity to learn and share.
- Connection to the Arts: Genuine interest in the arts to resonate with and contribute to the culture and community ethos.
- Experience: Minimum two years in hospitality; WSET Level 3 wine knowledge or equivalent preferred.
Role & Responsibilities:
- Proven experience as a Sommelier or in a comparable role within a premium wine bar or restaurant.
- WSET Level 2 or 3 qualification (or equivalent) preferred, or strong progression towards this level.
- Possess in-depth wine knowledge with the ability to curate, recommend, and upsell wines tailored to guests and menus.
- Lead wine service on the floor to deliver a refined, knowledgeable guest experience.
- Collaborate with kitchen and management to maintain and evolve the wine list, including pairings and seasonal updates.
- Demonstrate excellent communication skills to educate and inspire guests and team members.
- Play a key role in training and developing junior staff in wine knowledge and service standards.
