We are looking for a passionate and knowledgeable Sommelier to join our front of house team. This role goes beyond recommending wines. It is about curating memorable guest experiences, telling the stories behind each bottle, and creating pairings that bring Callum Graham\’s menus to life. As Sommelier, you will oversee the wine programme at The Wild Rabbit. You will manage the cellar with precision, craft pairings for our tasting menus, and inspire both guests and colleagues with your knowledge and enthusiasm.,

  • Guide guests through the wine list, offering thoughtful recommendations tailored to their preferences
  • Design and deliver pairings for tasting menus, collaborating closely with Callum Graham and the kitchen team to reflect seasonality and flavour profiles
  • Maintain the wine cellar to the highest standard, ensuring accurate stock management and rotation
  • Share knowledge of wine regions, producers, and sustainable practices with both guests and colleagues
  • Deliver tastings and training sessions to develop the wine knowledge of the wider front of house team
  • Contribute ideas to evolve the wine programme, balancing classical prestige with innovative producers
  • Provide polished and attentive fine dining service, ensuring every guest experience is seamless and memorable

    Previous experience as a Sommelier or strong wine knowledge in a fine dining environment

  • WSET qualification (Level 2 or higher) or equivalent knowledge preferred
  • A deep passion for wine with the ability to communicate confidently and accessibly with guests
  • Organised and precise, with strong cellar management skills
  • Excellent service skills and a natural ability to build rapport with guests
  • Enthusiastic about training and inspiring others in the team
  • Calm and professional under pressure, with meticulous attention to detail

  • Working in close connection with Daylesford Farm, our menus showcase the best seasonal, organic produce, crafted with skill and creativity. Under the leadership of Executive Chef Callum Graham, our team combines classical technique with modern inspiration, making The Wild Rabbit one of the most exciting fine dining destinations in the Cotswolds.

    The on target earning potential for this role is 47,000 per annum based on a 45-hour contract – comprising a base salary of 40,000, plus a qualified estimate of 7,000 in gratuities and service charge
