ABOUT THE ROLE
As a Commis Chef, you will be responsible for executing dishes in line with our seasonal menu specifications, maintaining the highest standards of quality, consistency, and presentation. Ideally, you will have experience in a fresh food or restaurant environment; however, a genuine passion for seasonal, sustainable food and a willingness to learn are equally valued. This role will support our Green Michelin Star restaurant, The Trough which offers a varied and dynamic working environment. Your responsibilities will include preparing food for our deli, farm restaurant, and Daylesford Delivered service, as well as supporting the delivery of events within Heritage House when required. Working closely with our team of skilled chefs, you will develop your culinary techniques while contributing to a kitchen that champions organic produce, seasonality, and a true farm‑to‑fork ethos.
RESPONSIBILITIES
- To play a daily active role in making sure the kitchen is set up for service
- To ensure that food is prepared and presented to the highest standards as required by the restaurant
- To be fully conversant with all menus, in particular items which are the responsibility of your section and of their recipes and quantities
- To advise the Chef de Partie of any irregularities in stock control
- To work with the rotation of stocks and correct storage procedures
- To produce food as directed by the Chef de Partie and to present it at the times required
- To ensure all work areas are clean and tidy
- To work in close liaison with all sections within the Kitchen to ensure an efficient service
- To anticipate all possible complaints and attempt to resolve them in the first instance
- Report/escalate any potential issues or complaints to the Manager on duty
SKILLS & REQUIREMENTS
- To be able to use and have a knowledge of equipment, tools and machinery within the Kitchen (in line with kitchen induction training), reporting any defects immediately
- To carry out any reasonable request as directed by Head Chef/Sous Chef
- To highlight H&S matters to your line manager
- To deliver and champion The Daylesford standard
- To be proactive in assisting your team member colleagues
- To actively share knowledge of your subject
- To be reliable and punctual on shift
- To ensure all mandatory and legal training is complete and up to date; and refreshers completed prior to the expiry date
- To attend training courses when requested
