The Trough showcases a true farm-to-fork dining experience, with menus inspired by the seasons and centred around the finest organic ingredients.

Much of the produce is grown, reared, and crafted on the Daylesford estate and sister farms, ensuring unrivalled freshness, quality, and provenance in every dish.

Working within the kitchens at Daylesford means being part of a team that values sustainability, creativity, and excellence.

From field to plate, every ingredient tells a story, giving chefs the opportunity to work with outstanding produce while contributing to an authentic and award-winning dining experience.

Responsibilities

  • Support the smooth day-to-day running of the kitchen, ensuring all sections are fully prepared and service-ready.
  • Prepare and present dishes to the highest standards, delivering a consistently exceptional guest experience.
  • Confidently lead and manage a section, deputising for the Chef de Partie when required.
  • Maintain excellent stock control, rotation, and storage practices to minimise waste and maximise quality.
  • Deliver dishes accurately and efficiently, meeting service standards and timings.
  • Uphold exemplary standards of food safety, cleanliness, and kitchen hygiene at all times.
  • Work collaboratively with the Head Chef and Sous Chef, supporting wider kitchen operations as needed.
  • Demonstrate professionalism through reliability, punctuality, and a strong work ethic.
  • Maintain outstanding personal presentation and hygiene standards, acting as an ambassador for the Daylesford brand.

Skills & Requirements

  • Previous experience in a fast-paced, high-quality restaurant kitchen where food is prepared fresh on site.
  • Strong knowledge of ingredients, with an appreciation for seasonality, quality, and provenance.
  • Solid understanding of fundamental and classical cookery techniques, with the ability to apply them consistently to a high standard.
