We are a seafood focused Italian restaurant in London looking for a Sous Chef who lives and breathes fish. We offer modern Italian with a traditional base, handmade pasta, a raw bar with oysters, whole fish grilled, crudo and seasonal UK seafood. Fast‑paced, quality‑first kitchen.

You will work closely with and report to the Head Chef, support and develop the kitchen team and product.

Requirements

  • 2+ years as Sous or strong CDP ready for step up
  • Confident with fish butchery, raw prep, oyster shucking, grill section
  • HACCP knowledge for raw/seafood handling
  • Calm under pressure, leads by example, teaches junior chefs
  • Passion for Italian regional seafood cooking
  • Good level of spoken and written English (essential)
