Aultmore & Macduff Distilleries form part of the Bacardi UK Supply and play a key role within Spirit Supply. The Distillery Supervisor supports a range of complex and dynamic processes, including milling, mashing, fermentation, distillation, and bulk spirit handling. These operations require strong technical and leadership expertise to effectively plan workloads and support the delivery of UK Supply goals in line with the organisation’s long‑term strategy.
As the Distillery Supervisor – Operations, you will be responsible for driving continuous improvement across production and administrative support functions within the distillery. You will provide day‑to‑day operational leadership, ensuring production activities are delivered safely, efficiently, and in line with agreed plans. The role also offers exposure to wider operational management responsibilities through planned development activities, including deputising for the Aultmore Distillery Manager as required.
The ideal candidate will have strong knowledge and experience of whisky production operations and a clear understanding of the demands, constraints, and dependencies involved in delivering production plans and meeting customer requirements. You will be confident in the administrative aspects of manufacturing operations and proficient in standard IT applications, including Microsoft Office. You will be an enthusiastic and proactive leader, contributing to team success through effective planning, clear communication, and the ability to remain flexible and adaptable in a changing operational environment.
Key Responsibilities- Assist in achieving both Distilleries annual output targets working as one team to produce consistent spirit quality within budget and in a safe working environment.
- Place orders for all raw materials and consumables, monitoring and reporting expenditure monthly against budget.
- Assist the Aultmore Distillery Manager in all aspects of the job including participating in the “On Call” roster.
- Provide cover for the Aultmore Distillery Manager to include the day‑to‑day operation and any tasks associated with the distillery.
- Be involved in the production, storage and handling of feed ingredients and will be fully aware of the animal feeds regulations.
- Assist in the management of all financial, operational, C&E, EHS and SEPA documentation for both Distilleries.
- Participate in UK Supply communication briefings/meetings and help with development issues and other initiatives where appropriate.
- Actively participate in Continuous Improvement of distillery operators and operations/activities by considering current work practices and suggesting alternatives where appropriate.
- Be fully aware of the financial responsibilities and participate in the forming of the annual distillery budget.
- Communicate clearly with the Aultmore Distillery Manager and operators on an hourly/daily basis.
- Ensure that all relevant samples are taken and dispatched to customers, company laboratory, and external laboratories.
- Promote and reinforce correct Environmental, Health & Safety behaviours through personal example.
- Take action upon any environmental, health and safety matter brought to notice, and report to the relevant Manager immediately on any matter which is unable to be rectified.
- Ability to balance and prioritise workloads.
- Ability to work closely with others within the team, and with other internal functions (Finance, Customs Compliance, Production team, etc.).
- Basic understanding of mechanical equipment and control systems.
- Highly competent in Microsoft Office applications and IT systems in general.
- Recording and sharing of trackers and KPIs relating to site operations.
- Understanding and exercising financial and customs compliance requirements in relation to all operations.
- Act as 1st point of contact for operators regarding correction of any system processing errors, assisting in corrections.
- Drive continuous improvement through improving systems and training operators.
- Contribute to and administer the Idea Generation initiative.
- Assist with the review and administration of Standard Operating procedures and Risk Assessments.
- Ensure all visitors and contractors are fully inducted to the site.
- Good problem solving and analytical abilities.
- Providing cover to other team members and sites when needed and engaging in cross‑functional support within the team.
- Valid driving licence.
- Capability to work in a seamless team, cross‑functionally.
- Honest, reliable, trustworthy and resilient.
- Overall good collaborator and excellent communicator.
- Excellent numeric and literacy skills.
- Willingness to travel to other sites when required.
