We have a full-time live-in vacancy for a management couple in Crewkerne in Somerset; the position will be available from the beginning of November. Set in a 17th-century town centre hotel with two bars and a restaurant, catering for local trade and tourists.

Responsibilities

  • The company is responsible for the fabric of the building, all fixtures and fittings, maintenance, wet stock, utilities, business rates, marketing, online booking agents, website management, and support.
  • The site operator is responsible for the employment, payment, training and the day-to-day management of all staff at the property and food costs.
  • Staff is contracted to the manager; PAYE and national insurance contribution payments are the responsibility of the site operator.

Qualifications

We require an experienced management couple where ideally one of the team is a head chef who has operated a similar style establishment.

Payment

Each site operator is paid a percentage of the gross turnover weekly dependent on the site in the range of 16%–17% of the wet turnover, 17%–20% of the gross accommodation income and 17%–21% charge of the gross food income. This gives the onsite operator a weekly incentive and unlimited earning potential dependent on the turnover and the staff costs. Hands-on operators will control the working percentage and food GP to best effect, freeing Southcoast to concentrate on marketing, promotions and online presence of the outlet.
