We need someone who can lead and inspire a busy kitchen team; someone who understands that food is central to a happy holiday. Someone who is driven, is passionate in delivering standards and enjoys the camaraderie of teamwork is essential for this role; we get busy, but we never forget why we love what we do. Someone who can lead through our teams, to engage them and set attainable goals; someone that finds solutions to problems and communicates well with both management team as well as the supporting team members. You will need to be resilient, used to high pace/high volume, but someone that thrives under pressure and manages to keep their head and help those that need support, even in the busiest of shifts.
Who we are
We are a very busy pub in the new forest that pride ourselves on delivering great food out to our guests quickly. We drive high volume, and even higher volume in our peak summer months, but we work together and always keep a positive attitude. Being a holiday park, we have a diversity of guests coming through our doors but our standards never change, we offer a classic menu with a few twists to reflect the tastes of all that visit our parks. Being the main F&B destination on site, we serve food from 9am through to 9pm, with that there are a variety of shift types available, but never a split (unless requested!) or an all day.
What you’ll be doing
As part of our F&B team, you will manage and inspire the kitchen team to produce brilliant meals to our high standards. This will include:
- Attaining and implementing standards
- Ensure consistency of quality of dishes before they reach the customer
- Stock management – ordering, specs and stock takes
- Assist the Kitchen Manager in team training and recruitment
- Rota writing and onboarding
- Implementation of all legislative measures and administration required by the current Food Hygiene, licensing, and collaboration and respect across the team.
You will lead from the front, setting the standards for your team and motivating, coaching and supporting them to be outstanding. One more thing…holidays happen at holiday times, and eating, and drinking goes on into the night, so you’ll need to work your magic on bank holidays, evenings and weekends too.
Skills, experience and qualities you’ll need

- Communication skills by listening to customers, engaging and building a rapport with your team and by dealing with challenging people and situations
- Experience of working under pressure including managing a workload at busy times
- An ability to build a commercial awareness and the experience of working in a commercial environment as well as becoming the best you can in your area of expertise
- Knowledge of working with regulations such as health & safety, auditing, and making sure that colleagues understand them
- Great leadership skills and the ability to build a high performing team in order to control, develop and improve all aspects of the kitchen including: P&L, yields, people, standards, legal compliance, service and brand integrity
- An NVQ and relevant food hygiene certificates.
