In November, we will be opening Bay Café by Auchrannie, an exciting new venture in the heart of Brodick. The café will offer fresh, tasty food, quality drinks and the friendly, welcoming service for which Auchrannie is known.
About the role
We are looking for a capable and passionate Chef to join the kitchen team at Bay Café by Auchrannie with the ability to run the fast paced kitchen and run the shift in the absence of the Resort Executive Chef..
Working alongside the café/Resort management team, you will take responsibility for leading the kitchen during your allocated shifts, ensuring that food is prepared and presented consistently and that the kitchen operates safely, efficiently and calmly.
This position would suit someone with previous experience of leading or supervising a small kitchen team, either as an experienced Chef de Partie who is ready to take the next step or as a Lead Chef within a café, bistro or similar hospitality environment.
As part of a brand-new team, you will also have the opportunity to help establish the standards, routines and welcoming atmosphere of our new café.
In this role, you will:
- report to the Executive Chef and lead the kitchen team during allocated shifts, organising tasks and ensuring service runs efficiently
- prepare, cook and present café dishes consistently, following agreed recipes, portion sizes and presentation standards
- delegate preparation and service duties to other members of the kitchen team
- support, supervise and provide guidance to less experienced members of the team
- ensure orders are prepared accurately and served within the required timescales
- maintain high standards of food quality and presentation throughout each service
- complete food preparation before and during service, including preparing ingredients and assembling dishes
- check the quality and freshness of ingredients before use
- maintain a clean, organised and fully stocked kitchen throughout each shift
- ensure all food safety, hygiene and allergen procedures are followed by the kitchen team
- ensure food is stored, labelled and rotated correctly and that all required temperature checks are completed
- communicate clearly with front-of-house colleagues regarding orders, waiting times, dietary requirements and unavailable items
- manage allergy-related orders, dietary requirements and special requests carefully, following the correct procedures
- monitor stock levels and inform the café management team when ingredients or supplies need to be reordered
- assist with receiving, checking and correctly storing food deliveries
- help control food costs by following agreed portion sizes, preparation levels and stock-rotation procedures
- minimise food waste and encourage the efficient use of ingredients
- ensure all kitchen areas and equipment are clean and tidy before, during and after service
- complete and oversee opening, closing and daily cleaning duties
- report any damaged equipment, maintenance concerns or food safety issues promptly
- help create a positive, supportive and professional working environment
- participate fully in training and development opportunities.
To be a good fit for this role, you will:
- have previous experience of leading or supervising a kitchen team
- be an experienced Chef de Partie who is ready to take on greater responsibility, or have worked as a Lead Chef within a café, bistro or similar environment
- have experience working in a busy kitchen using fresh ingredients
- be confident preparing and cooking consistently high-quality dishes
- demonstrate strong existing kitchen skills and a willingness to continue learning
- be comfortable allocating tasks and providing direction to other members of the team
- have a good understanding of food hygiene, allergens and health and safety requirements
- remain calm, organised and focused during busy services
- demonstrate good attention to detail and take pride in the food you and your team prepare
- communicate clearly and build positive working relationships with kitchen and front-of-house colleagues
- be flexible, reliable and willing to support other members of the team

Hours for this position may vary on a weekly basis and will be worked over five days out of seven. Shifts will be mainly during the daytime and will include weekends, although some evening shifts will also be required. Opportunities to work in the Resort Kitchens on a rotational basis may be available.
