About You: Are you an experienced Sous Chef with a background in the finer end of dining? Are you looking for an opportunity to be part of a team that is looking to make a real mark on the Ayrshire dining scene? We are looking for someone to support the Head Chef and be a leader in his absence: from delivering carefully presented, high quality plates to managing inventory and helping motivate and coach an effective crew with a professional, collaborative ethos. A strong background in pastry is desired but not essential.
With a current capacity of 32 covers but a two-phase extension in the works, this is an ideal time to join the business as the brigade will grow alongside the scope of the venue. Plus, with further expansions of the company in mind, there is real scope for career progression in the future.
About Us: Auchincruive F&B Ltd operates the popular Clocktower Café Bar as well as Clocktower Events at the Auchincruive Estate, Ayr. We opened our second restaurant, Clocktower on Main Street (Prestwick) last December. We are a family-run business with a simple goal: to create truly unique venues that are the backdrop for memorable moments whether it’s a dish that blows you away, service that you yearn for or a party that you never forget, we want to be at the heart of it all and the first port of call when you want a dining experience to remember.
Responsibilities:
- Input on menu development, SOPs and food delivery
- Ensure food preparation and plating is completed to specification and in line with company quality standards
- Ensure the company’s Food Safety Management requirements are maintained
- Ensure training materials, kitchen documents and policies are displayed and up to date
- Ensure the team are trained in and follow SOPs, and coach the team on kitchen standards and professional development
- Monitor labour costs, wastage and food costs in order to maximise profitability
- Ensure HACCP logs and COSHH procedures are adhered to, ensuring that strict allergen management procedures are followed
