The imaginative renewal of this historic property at 94 Piccadilly will capture the spirit of London like no other, providing a captivating new Mayfair destination for Londoners and international visitors alike.

Set in the historic building which formerly housed the iconic In and Out military club, the 18th Century Georgian mansion and Grade 1-listed Palladian-style townhouse will be brilliantly reimagined as a 102‐room hotel. Preserving its rich heritage while offering a harmonious blend of luxuriously private and vibrant social spaces replete with unique dining destinations and Auberge spa. It will also be home to an exclusive members club set to define the new pulse of modern London life.

Job Description: Major's Grill, the signature restaurant of Cambridge House in Mayfair, is a glamorous ode to ritzy mid‐century dining, drawing inspiration from the classic London grill. Major's Grill blends timeless elegance with dramatic flair. The menu will be a love letter to classic cuisine, showcasing the finest cuts of meat and seafood and local produce. An original concept, Major's Grill is set to redefine London dining.

The General Manager will lead Major's Grill from opening onwards, shaping its identity, guiding a talented team, and ensuring every guest experience is exceptional. Taking ownership of all restaurant operations, you will drive excellence across service, team leadership, and commercial performance, working closely with the culinary and leadership teams to create a seamless, elevated guest journey. Your leadership will maintain the highest standards of presentation and hospitality, inspire team members to perform at their best, and establish Major's Grill as a Mayfair destination renowned for extraordinary dining, meticulous attention to detail, and genuine hospitality.

Key Responsibilities:
  • Set and maintain the highest standards of service, presentation, and genuine hospitality.
  • Implement operational procedures, service rituals, and best practices ahead of opening and maintain them post‐launch.
  • Inspire, guide, and develop team members at all levels, building a motivated, confident, and professional front‐of‐house team.
  • Monitor key performance metrics, analyse trends, and implement strategies to continuously improve service quality, team engagement, and financial results.
  • Manage financial, P&L responsibility, budgeting, forecasting, cost control (food, labour, supplies), and revenue optimisation across outlets.
  • Support marketing, events, and PR initiatives to position Major's Grill as a leading destination within London and beyond.
  • Collaborate with Sales & Marketing, Events, and Operations to ensure seamless integration of F&B in guest offering, special events, brand positioning, and overall hotel guest journey.
  • Oversee recruitment, training, and ongoing development, ensuring every team member is equipped to deliver outstanding service.
  • Collaborate closely with the culinary team to ensure coordination between the kitchen and front‐of‐house, enhancing the overall guest experience.
  • Drive commercial performance by managing budgets, monitoring costs, optimising resources, and maximising revenue without compromising service standards.
  • Maintain strong relationships with guests, responding proactively to feedback and creating memorable experiences that encourage loyalty and repeat visits.
  • Ensure compliance with licensing, H&S, hygiene standards and legal regulations in all outlets.
  • Represent Major's Grill with professionalism and charisma, cultivating the restaurant's reputation through visible, hands‐on leadership.
  • Lead all day‐to‐day restaurant operations, ensuring seamless service, and a consistently exceptional guest experience.
  • Set service standards and SOPs to ensure consistent excellence in guest experience.
  • Monitor guest feedback and market trends to ensure Cambridge House remains distinctive and consistently ahead of expectations.
Qualifications:
  • Experienced General Manager or senior restaurant leader in high‐end hospitality, preferably in London.
  • Strong commercial acumen: expertise in P&L management, forecasting, revenue growth.
  • Proficiency with relevant systems: reservation and table‐management software, POS systems, staff scheduling tools, budgeting tools.
  • Experience in delivering exceptional, consistent experiences.
  • Clear and polished communication skills, capable of being both a hands‐on leader and a public face for Cambridge House's F&B offer.
  • Excellent leadership ability: confident in guiding and unifying diverse teams across outlets under a coherent standard. Inspires, supports, and develops team members, creating a positive, motivated, and collaborative culture.
