Job Description
Bar Manager
Reports to: General Manager
About …At Sloane
The blend of discipline and chaos, exclusivity and electricity.
…At Sloane is the London chapter of the Costes story. Hidden in the heart of Chelsea, the bar is its heartbeat: intimate, glamorous, and alive. Here, service is precise but never stiff, and every detail — from the way a glass is placed to the tone of a greeting — matters.
It’s also a place where crowd curation is an art form. Our bar attracts a beautifully eclectic mix — from long-time Chelsea regulars to artists, musicians, and cultural icons, djs create the soundtrack to nights that feel spontaneous yet perfectly orchestrated.
…At Sloane is an old-school bar for a modern generation — the kind of place where you don’t look at your phone, you look at people. A place of energy, elegance, and unexpected encounters. It’s not just about cocktails; it’s about connection.
We are looking for a Bar Manager with both style and structure — someone who understands that true elegance is a choreography of discipline, emotion, and personality. You’ll lead a team trained to perfection, yet alive with character; a team that delivers consistency with soul.
Your Role
As Bar Manager, you will set the tone of the house — be the link between precision and pleasure. You’ll oversee the full beverage journey across the bar, restaurant, lobby, minibar, and in-room dining, ensuring everything reflects the signature …At Sloane feeling: sensual, seamless, and precise.
What You’ll Do
Craft the Experience
- Create an atmosphere that feels alive — seductive, elegant, and unmistakably ……At Sloane.
- Lead, train, and inspire a team that delivers flawless service with character and confidence.
- Maintain a culture of precision — detailed SOPs, daily briefings, and ongoing tastings to perfect every pour, gesture, and client interaction.
- Develop and refine beverage menus that blend artistry with intuition, sophistication with a hint of provocation.
- Personally engage with guests — anticipate desires, remember details, and make each encounter feel unique and effortless.
- Handle guest feedback with calm professionalism.
- Champion a standard of presentation and energy that turns service into theatre.
- Drive revenue through creative upselling and ensure guest satisfaction targets are met and exceeded.
- Ensure consistency of service standards across all beverage outlets, including minibar and in-room dining.
Lead with Vision
- Supervise all beverage operations across the property — bar, restaurant, minibar, and lobby.
- Collaborate with the General Manager and Restaurant Manager to ensure a unified, flawless guest journey.
- Monitor performance and feedback, ensuring consistency across every touchpoint.
- Uphold full compliance with health, safety, and licensing regulations — applying the same discipline you apply to service.
- Prepare reports, budgets, and KPIs — blending creativity with commercial instinct.
- Manage cost control, inventory, and stock rotation in line with budget and forecast targets.
- Analyse financial data and guest feedback to identify trends and improvement opportunities.
- Support the planning and execution of promotional events and brand activations.
Train. Perfect. Repeat.
- Lead with obsession for detail — constant training, feedback, and refinement.
- Build a solid team that embodies the …At Sloane philosophy: professional yet natural, serious yet seductive.
- Conduct regular tastings, workshops, and performance reviews to continuously sharpen knowledge and confidence.
- Maintain impeccable grooming, posture, and energy standards throughout the team.
- Participate actively in recruitment, induction, and career development to retain and nurture talent.
- Ensure adequate staffing levels and effective rostering to meet business needs while managing labour costs.
Who You Are
- A bar professional from a luxury lifestyle property — ideally with a background in Parisian or design-led hospitality.
- Fluent in English; French is a strong advantage.
- Holder of a Personal License.
- Deep knowledge of spirits, wines, and champagne (WSET Level 3 preferred).
- A natural host — magnetic, composed, and effortlessly engaging.
- Financially astute, operationally precise, and artistically inspired.
- Experienced in leading, training, and developing high-performing teams.
- Calm under pressure, detail-obsessed, and always impeccable.
- A sound understanding of UK Health & Safety, Licensing, and GDPR compliance requirements.
