Sushi Chef

Job Summary
We are looking for an experienced and passionate Sushi Chef to join our kitchen team. The successful candidate will be responsible for preparing high-quality sushi and Japanese dishes while maintaining excellent standards of food safety, hygiene, presentation and consistency..
Key Responsibilities
- Prepare sushi, sashimi, nigiri, maki, uramaki and other Japanese dishes to a high standard..
- Prepare and handle fresh fish, seafood, rice, vegetables and other ingredients safely..
- Ensure sushi is presented attractively and consistently according to restaurant standards..
- Prepare sushi rice, sauces, garnishes and other ingredients required for service..
- Maintain excellent food hygiene and food safety standards at all times..
- Check the quality and freshness of ingredients before preparation and service..
- Store food correctly and monitor temperatures and use-by dates..
- Keep sushi preparation areas, equipment and refrigerators clean and organised..
- Minimise food waste and use ingredients efficiently..
- Follow portion-control and recipe standards..
- Work efficiently during busy service periods while maintaining quality..
- Communicate effectively with the Head Chef and kitchen team..
- Assist with stock control, ordering and daily kitchen preparation when required..
- Follow all company health, safety and hygiene procedures..
Requirements
- Previous experience as a Sushi Chef or in a professional Japanese kitchen..
- Good knowledge of sushi preparation and Japanese cuisine..
- Strong knife skills and knowledge of fish preparation..
- Good understanding of food hygiene and allergen requirements..
- Ability to work under pressure in a busy restaurant environment..
- Good attention to detail and presentation..
- Reliable, organised and able to work effectively as part of a team..

Working Conditions
