About Arcade
Arcade is a collection of vibrant dining destinations and a platform for building the next generation of hospitality brands. Our landmark venues across London bring together chef-led restaurants, bars, and open kitchens in immersive, design-forward spaces where food, music, and atmosphere combine to create unforgettable guest experiences. Alongside our venues sits Arcade Create, our brand development platform. Through Arcade Create, we partner with ambitious chefs and founders to turn original ideas into living, scalable brands – launching, testing, and growing concepts within our high‑footfall locations. Brands developed through the platform include Manna, Solis, Hero, and many more, with successful concepts expanding beyond Arcade into standalone locations around the world. Together, Arcade and Arcade Create form a unique ecosystem where talent is championed, ideas are realised, and guests experience what’s next in food.
About the Role
We are hiring a Director of Brand Growth and Operations to lead the next phase of growth for Manna and Solis. We are looking for someone who has genuinely built, scaled, and commercially owned hospitality brands – not simply maintained established operations. This is not a traditional hospitality operations role, nor is it a brand marketing position. This is a business leadership role for an operator who thinks and behaves like an owner. You will take full accountability for the commercial performance, operational standards, profitability, leadership structure, and long‑term scalability of two high‑growth hospitality brands. The role is effectively a mini‑CEO mandate within the Arcade ecosystem.
The successful candidate will be responsible for strengthening operational foundations, improving profitability, building leadership capability, and scaling both brands into disciplined, high‑performing multi‑site businesses without compromising quality, culture, or guest experience.
This role requires someone equally comfortable:
- Leading operational performance
- Driving EBITDA growth
- Building scalable systems and playbooks
- Opening new sites
- Coaching senior operators
- Managing site‑level economics
We’d love to hear from you if you:
- Think like an operator and act like an owner
- Have led and scaled multi‑site hospitality brands through periods of high growth and delivered measurable revenue and EBITDA growth.
- Have full commercial fluency across labour %, COGS, contribution margin, pricing strategy, and site‑level P&Ls
- Can clearly articulate how you scaled a business, improved EBITDA, implemented systems, and built leadership structures
- Have experience opening and expanding hospitality brands without compromising standards or guest experience
- Build high‑performing teams and create strong succession depth
- Take responsibility for outcomes, not just activity
- Thrive in fast‑paced, founder‑led, high‑accountability environments
- Balance strategic thinking with hands‑on execution
- Track performance weekly and act quickly when results drift.
We are committed to building a diverse and inclusive team. We welcome applicants from all backgrounds.
