About the role: We're looking for a Sushi Master to become the face of our chef-led omakase counter, delivering an exceptional guest experience where craftsmanship, theatre and hospitality come together. You'll be serving guests directly from the counter, showcasing your skills, sharing your knowledge and creating memorable dining experiences with every service. This is a role for someone who takes genuine pride in their craft and enjoys engaging with people as much as preparing outstanding sushi.
What You'll Be Doing:
- Lead the daily operation of our omakase counter, preparing beautifully executed nigiri, sashimi, hand rolls and signature dishes using the highest quality ingredients.
- Create an experience by confidently talking guests through the menu, explaining seasonal ingredients, recommending pairings and bringing warmth and personality to every interaction.
- Maintain exceptional standards of quality, consistency and food safety while collaborating closely with the wider kitchen and front-of-house teams to deliver seamless service.
- Help develop new dishes, minimise waste, mentor junior chefs and ensure every guest leaves wanting to return.
We're Looking For Someone Who Has:
- Proven experience as a Sushi Chef or Sushi Master within a premium Japanese restaurant or omakase concept.
- Outstanding knife skills and expertise in preparing a wide range of seafood.
- A genuine passion for Japanese cuisine and continuous learning.
- Excellent communication skills and the confidence to engage directly with guests.
- A meticulous eye for detail and unwavering quality standards.
- A calm, organised approach in a fast-paced service environment.
- Strong knowledge of food safety, allergens and HACCP.
It Would Be Great If You Also Have:
- Experience working behind a chef's counter or open kitchen.
- Knowledge of sake and Japanese beverages.
- Experience coaching or developing junior chefs.
- Experience working in premium, high-volume hospitality.
