Job Description

  • This is an exciting opportunity for a talented and ambitious
  • Sous Chef to join the culinary team at

Principality Stadium , one of the UK's most iconic sports and entertainment venues.

Working alongside the Stadium Executive Chef and Head Chef, you will play a pivotal role in delivering exceptional food experiences across conference and events, premium hospitality, retail catering, and major sporting and entertainment events.

As a hands-on leader, you will support the day-to-day management of the main kitchen while driving food quality, innovation, and operational excellence.

This role offers the opportunity to develop retail food concepts, lead and inspire a high-performing team, and contribute to the delivery of world-class hospitality experiences in a fast-paced, high-volume environment where no two days are the same.

  • Job Responsibilities
  • Lead and support the delivery of high-quality food operations across conference and events, hospitality, retail, and matchday catering activities at Principality Stadium.
  • Oversee kitchen production and event execution, ensuring food is prepared, presented, and delivered to agreed quality, safety, and service standards.
  • Drive retail food innovation and menu development, creating commercially successful food concepts that enhance guest satisfaction and revenue performance.
  • Manage food cost control, stock management, and labour planning, ensuring efficient use of resources while meeting financial and operational targets.
  • Lead, coach, and develop the kitchen team, fostering a positive culture of excellence, engagement, and continuous professional development.
  • Ensure full compliance with food safety, HACCP, allergen, and health & safety regulations, maintaining the highest standards of hygiene and operational compliance.
  • Support the Head Chef in the day-to-day management of the kitchen and assume full responsibility for culinary operations in their absence.
  • Drive continuous improvement across culinary operations, identifying opportunities to enhance food quality, operational efficiency, guest experience, and overall business performance.

Key Requirements

  • Proven Sous Chef experience within a high-volume hospitality, stadium, events, arena, hotel, or conference and banqueting environment.
  • Strong Conference & Events catering expertise, with experience delivering large-scale hospitality and event operations to exceptional standards.
  • Commercial and retail food development experience, including menu creation, food innovation, cost control, and driving revenue growth through food offerings.
  • Effective leadership and people management skills, with the ability to motivate, coach, develop, and manage high-performing kitchen teams.
  • Comprehensive knowledge of food safety and compliance, including HACCP, allergen management, food hygiene, and Health & Safety legislation.
  • Strong organisational, communication, and problem-solving abilities, with the capability to thrive in a fast-paced environment and consistently deliver operational excellence.
