Arabica is seeking a dynamic, hands-on Market Supervisor to be the operational heartbeat of our renowned stall at Borough Market. We are celebrated for bringing authentic, high-quality Levant cuisine—especially our signature shawarma to London. The Supervisor is a pivotal leader who ensures the consistent execution of the Arabica standard: exceptional product quality, flawless hygiene, and an energetic, authentic customer experience in the heart of London’s finest food market. This is a role for a natural leader with a passion for Middle Eastern flavour and operational excellence.

Key Responsibilities

  • Operational Excellence & Shift Command
    • Leading the Line: Take full command of daily market shifts, orchestrating the seamless setup, rapid service, and meticulous close-down of the stall operation.
    • Team Leadership: Supervise, energise, and motivate the Market Assistants. Efficiently delegate roles—from the till to the carving station—to maintain high throughput during peak market rushes.
    • Training & Mentorship: Coach the team in the distinct Arabica service style, ensuring every interaction is warm, efficient, and professional. Train staff on the precise art of shawarma preparation and assembly.
    • Flow Management: Proactively manage queueing systems and customer flow to maximise sales and minimise wait times, reflecting the efficiency expected in a premium market environment.
  • Quality Guardianship & Product Authenticity
    • The Shawarma Standard: Ensure the consistent, perfect preparation of our flagship shawarma. Monitor meat quality, cooking temperature, seasoning, and carving technique to meet Arabica’s exacting standards.
    • Ingredient Integrity: Oversee the proper handling, rotation, and storage of our fresh, high-quality ingredients, from house-made pickles to bespoke spice blends, adhering to FIFO principles.
    • Visual Appeal: Maintain the stunning, clean presentation of the stall and all food displays, reflecting the sophisticated aesthetic of the Arabica brand.
  • Compliance, Cash & Customer Connection
    • Hygiene Focus: Maintain uncompromising standards of food safety and hygiene (HACCP), ensuring the stall is always ready for inspection and consistently working towards a top-tier hygiene rating.
    • Financial Oversight: Accurately manage the till operation, processing transactions, managing floats, and completing precise end-of-day sales reconciliation.
    • Ambassadorship: Act as a vibrant Arabica ambassador, engaging with Borough Market customers, sharing the story of our food, and expertly handling immediate customer feedback with grace.

Skills and Qualifications

The Ideal Candidate

  • Experience: 1-2 years of proven supervisory or senior team leader experience in a premium, fast-paced food service, street food, or quality casual dining environment.
  • Passion for the Levant: A genuine appreciation for Middle Eastern cuisine and a commitment to serving food of authentic, exceptional quality.
  • Shift Mastery: Demonstrated ability to lead and motivate a small team under intense pressure in a high-volume setting.
  • Certification: Current Level 2 Food Safety and Hygiene certificate is essential.
  • Flexibility: Must be reliable, highly punctual, and fully available for the required market hours, including key trading days (Fridays/Saturdays).
