The Role

  • Supporting the Head Chef with the day-to-day running of the kitchen
  • Leading the sushi section and maintaining exceptional standards
  • Preparing and presenting high-quality sushi, sashimi, nigiri, and raw dishes
  • Working closely with the wider kitchen team to deliver a seamless service
  • Training and developing junior chefs
  • Assisting with stock control, ordering, and waste management
  • Ensuring consistency, presentation, and quality across every dish
  • Maintaining food safety and hygiene standards at all times

About You

  • Currently working as a Sushi Sous Chef, Senior Sushi Chef, or strong Sushi Chef ready to step up
  • Strong experience preparing sushi, sashimi, nigiri, and raw fish dishes
  • Background within premium Asian, Japanese, or fusion restaurant concepts
  • Passionate about quality ingredients and precision-led cooking
  • Strong leadership skills and experience developing junior team members
  • Calm and organised under pressure
