Role Overview: This is a great time to join our team as a Senior Sous Chef. You will assist in spearheading the culinary experience and driving our approach in delivering a high-quality food offering. You will be results driven and assist the Head Chef, working closely with our supply chain partners, in-house centralised services, and on-property kitchen and front of house teams to continue developing, researching, and implementing appropriate efficiency and quality changes across all outlets.
As a Senior Sous Chef, you will ensure the smooth running of the Hotel Kitchen teams you are assigned and assume full accountability in the absence of the Head Chef, acting in their capacity, and as directed by Management. You will embrace every opportunity to create extra special moments for our guests and provide a personal experience our guests will want to share.
Main Responsibilities:
- Assist in the Management of all food and sundry costs through rigorous stock control measures.
- Analyse and present monthly profit and loss commentaries with follow-on corrective activity as directed by the Head Chef.
- Assist with Daily/weekly payroll and food cost analysis in accordance with forecasted and materialised revenue levels to ensure optimal performance with overspend corrected within the same trading period.
- Maximise sales and profit while ensuring customer satisfaction at all times.
- Coach, train and support all Chefs to provide consistently high standards, while continually looking to improve.
- Be highly visible at key service periods focusing attention to detail on culinary delivery.
- Maintain team focus on ‘the Customer’s need’ with service personalisation.
- Lead and develop the Kitchen team through teamwork, skill, initiative and communication, assuming a leadership role in support of the Head Chef during all periods of service.
- Ensure that a consistently high level of food preparation is provided, whilst also following the Company guidelines and recipes.
- Be fully conversant with the food gross profit achieved and assist the Head Chef in achieving the budgeted food G.P.
- Comply with statutory and legal requirements for Hygiene, Health and Safety and other legislation, ensuring that members of the Kitchen Team are also aware of these requirements.
You will be a strong team player but also have the initiative to work on your own. You will have a passion for cooking, excellent attention to detail and be service orientated. You will display confidence, strong business acumen and the ability to forecast sales and achieve budgets. You will be approachable and dedicated to ensure that the highest standards are achieved. You will have the talent to build, develop and motivate a team to deliver excellent levels of customer care.
To excel within this role, you will have:
- Experience as a Senior Chef de Partie/Sous Chef, ideally within a 4 or 5 star operation.
- Previous experience of catering on a large scale would be an advantage.
- Previous managerial experience within a similar role.
