We are looking for a talented and enthusiastic Beverage Programme Assistant Manager to join the team of our stunning private members club Annabels, 46 Berkeley Square, part of The Birley Clubs. Annabels at 46 Berkeley Square covers 26,000 square feet and is home to five restaurants, bars, private dining rooms and a cigar salon. A team of world-class Chefs, Sommeliers and Mixologists have designed an outstanding array of menus, cocktail, and wine lists. Expertly sourced, seasonal ingredients, wines and spirits are brought together using traditional and subversive techniques to create truly unique dining and drinking experiences.

The Beverage Programme Assistant Manager will support the management, development, and execution of the beverage programme from a Back of House perspective, working closely with the Director of Bars, Bars Manager, and bar teams to ensure the programme is delivered to the highest possible standard. This role is responsible for overseeing the daily operations of the Beverage LAB and Batch Room, ensuring all drink preparation, batching, and stock management processes operate with precision, efficiency, and consistency. The position supports drink development, menu implementation, and large-scale events, while ensuring the beverage programme operates in line with profitability targets and gross profit (GP) requirements. The role will also provide operational support during selected events throughout the year.

Key Responsibilities
  • Beverage Preparation & Programme Support: Act as an ambassador for the beverage programme, ensuring all preparation, batching, and development processes are executed with precision, consistency, and attention to detail. Oversee the daily operations of the Beverage LAB and Batch Room, ensuring all preparations, batched cocktails, and supporting ingredients are produced and stored in accordance with company standards. Manage and maintain stock levels of batched cocktails, ingredients, and FOC products within the Batch Room and LAB areas. Lead the creation, organisation, and documentation of cocktail recipes and preparation procedures, ensuring information is accurate, accessible, and consistent across the team. Oversee the creation and implementation of POS buttons for new drinks and menu items, ensuring correct recipes, costing, and operational instructions are reflected.
  • Drink Development & Events Support: Support the development and testing of new drinks and beverage concepts alongside the management team, ensuring preparation procedures are documented and scalable for service. Assist in the planning and preparation of beverage production for large-scale events, activations, and Hero Events, ensuring sufficient stock and preparation is completed in advance. Provide front-of-house and back-of-house support during selected events and assist with operational coverage when required.
  • Stock Control & Financial Performance: Lead stock-taking procedures for the beverage programme, ensuring accurate inventory management. Work closely with management to maintain targeted GP margins, cost controls, and minimise waste across outlets. Monitor usage of ingredients and batched products to ensure efficient production and cost management.
  • Communication & Team Collaboration: Maintain clear communication with FOH bar teams to ensure smooth coordination between beverage preparation and service operations. Build effective working relationships with colleagues, supervisors, managers, and brand partners. Assist with the training and development of team members in beverage standards, preparation procedures, and operational best practices. Support managers in maintaining department standards through regular operational checks.
  • Health & Safety / Compliance Responsibilities: Ensure all beverage preparation areas, including the LAB and Batch Room, operate in full compliance with company Health & Safety, Food Safety, and Hygiene standards. Maintain and monitor date labelling systems for batched cocktails, syrups, infusions, fresh ingredients, and prepared products, ensuring correct shelf-life procedures are followed. Support the management team during internal audits, spot checks, and external inspections when required. Ensure BOH equipment including ice machines and juice machines are cleaned and documented weekly by the bar back team. Immediately report and address any health & safety or food safety risks within beverage preparation areas.
