And Then Tooting is a busy, independent rooftop neighbourhood bar entering its next stage of growth. We are looking for an Assistant General Manager who is organised, detail-driven, and confident holding people accountable. This role supports the GM by bringing structure, consistency, and high standards to the operation and will play a key part in our future expansion.
What You’ll Do
- Maintain daily opening/closing checklists
- Keep BOH organised, clean, and compliant
- Ensure standards (lights, menus, toilets, vibe) are met every shift
- Manage BrightHR, Health & Safety checks, and compliance logs
- Hold the team accountable to expectations and routines
- Support supervisors with structure and follow-through
- Improve systems and processes to ensure consistency
- Cocktail specs
- Menu development
