Mareida has been founded by Prenay Agarwal to showcase Chilean cuisine in London following his time spent in the country and his love and passion for the food there. To that end, we are bringing in Head Chef Trinidad Vial Della Maggiora to lead the kitchen who is, in turn supported by Chef Carolina Bazan. Bazan is very well known and respected having been voted Latin Americas Best Female Chef in 2019 by the Worlds 50 Best.
The food is intended to showcase dishes from coast to the mountains and the menu may well include some of the dishes that proved most popular at the Carousel residency last year such as lamb corn cake alongside grilled sea bar with quinoa, avocado, pebre and chilli. The wine list will be put together by sommelier Rosario Onetto and will have a distinct Chilean focus. It will reflect the diversity of the wine regions in the country, from the North in Atacama down to the South.
As Bar Manager it will be your responsibility to lead the Bar team and the wine program to deliver a seamless, knowledgeable and warm experience for our customers. You will also support the management team as needed. Working on the bar making drinks, serving guests, training the bar team on cocktails and the wider team on wines whilst ensuring that stocks are controlled and margins are maintained.
Requirements:
- Minimum 2 years as a Bar Manager in a similar high-end restaurant or bar that carries in excess of 50 wines and a small but strong range of cocktails
- Ability to order and control bar/wine stocks
- Ability to train and lead the bar team to deliver consistently great guest experiences
- IT competent (MS Office, EPOS & Stock Systems)
- H&S and FSMS compliance management
- Strong Wine Knowledge
