Location: Amberley, West Sussex – a historic luxury hotel in the countryside. The role is within the hotel’s flagship kitchen.
Responsibilities
- Assist with the recruitment and training of the kitchen team, ensuring they are fully trained in all systems for consistent service and product delivery.
- Develop a close working relationship with all food & beverage managers and colleagues to ensure all guest expectations are met.
- Support the Senior Chef team in creating a team environment that promotes good morale and a high level of commitment and pride.
- Assist the Senior Chef team with regular staff appraisals to meet training needs and address any issues.
- Ensure all food is stored correctly and stocks are rotated in line with the Food Hygiene Regulations; record all temperatures and corrective actions.
- Maintain sufficient preparation of food items to avoid interruptions to service.
- Control food quality and minimise wastage.
- Understand and control departmental and actual payroll cost by allocating labour resources in line with forecasted business levels.
- Share knowledge with new and budding kitchen personnel.
- Act as Manager of the kitchen in the absence of the Head Chef and Sous Chef.
