We are recruiting an experienced, hands-on Food & Beverage Manager for a well-established hotel in the Scottish Highlands.

The hotel offers relaxed dining, bar service, afternoon tea, private functions and weddings.

We are seeking a visible and engaging leader who can deliver excellent guest experiences while maintaining strong commercial and operational control.

Working closely with the General Manager and Head Chef, you will create a seamless connection between the kitchen and front-of-house teams and ensure consistently high standards across the department.

Key responsibilities

  • Lead the daily operation of the restaurant, bar, breakfast service, afternoon tea and functions.
  • Maintain excellent standards of service, presentation and guest care.
  • Recruit, train, motivate and develop the food and beverage team.
  • Prepare effective rotas that meet operational requirements while controlling labour costs.
  • Lead team briefings and remain visible during busy services.
  • Work closely with the Head Chef on menus, service delivery, dietary requirements and guest feedback.
  • Manage reservations, table planning and special requests.
  • Oversee weddings, groups, celebrations and private events.
  • Monitor revenue, payroll, margins and departmental performance against budget.
  • Manage ordering, stock rotation, stocktakes, wastage and supplier relationships.
  • Increase average guest spend through team training, menu knowledge and thoughtful upselling.
  • Ensure compliance with food safety, allergen, health and safety and licensing requirements.
  • Resolve guest concerns promptly and professionally.
  • Maintain accurate records, reports and operational procedures.
  • Support the wider hotel management team and act as duty manager when required.
