As a Senior Sushi Chef at Nobu Hotel London Portman Square, you’ll be part of the team behind one of the most iconic culinary brands in the world. This role is about more than preparing sushi - it’s about delivering an unforgettable dining experience through craftsmanship, creativity and Nobu’s uncompromising standards.

You will:

  • Prepare, cut, cook and present sushi dishes to Nobu’s exacting standards
  • Ensure your station is set up and operating efficiently throughout service
  • Follow recipes and maintain consistency across all dishes
  • Create Omakase, tasting and special menus in collaboration with the Head Sushi Chef
  • Uphold strict hygiene, safety and sanitation practices at all times
  • Store raw materials safely and maintain cleanliness in all areas
  • Monitor Health & Safety compliance and report any issues promptly
  • Maintain equipment in safe working condition and report breakdowns
  • Handle allergy requests with care and communicate clearly with service teams
  • Support and train new team members, fostering collaboration and excellence
  • Attend team briefings and contribute ideas for continuous improvement
  • Demonstrate a proactive, positive approach to work and guest care
  • Act as an ambassador for Nobu values of Family, Crafted, Smile and Kokoro
