Parsonage Grill, belonging to the five-star Old Parsonage Hotel, is famous for its intimate, bohemian and clubby atmosphere. The menu philosophy focuses on using the best local produce available to create a menu of sophisticated yet simple British dishes.
We are looking for an experienced Pastry Chef to join our kitchen team at the Parsonage Grill, taking responsibility for the pastry section and working alongside the Head Chef in the wider management of the kitchen operation.
The ideal candidate will:
- Work alongside the Head Chef in overseeing the pastry operation and supporting the wider kitchen team
- Ensure consistency in delivering the restaurant's high standards across all pastry, afternoon tea and dessert dishes
- Be passionate and knowledgeable about food, pastry, seasonality and quality ingredients
- Have the ability to lead, inspire and motivate people
- Have excellent interpersonal communication, coaching and teamwork
- Be able to work efficiently under pressure with effective time management skills
- Have a knowledge of current Health & Safety, Fire Safety, Food Hygiene and Allergens legislation
- Have experience within a similar senior pastry role, ideally within a 5-star luxury environment
Typical duties of this role are:
- Take responsibility for the day-to-day running of the pastry section during preparation and service
- Develop and maintain recipe, presentation and portion specifications, ensuring consistency & high standards
- Maintain prep levels appropriate to service and ensure the section operates in an efficient and timely manner
- Assist the Head Chef with the development of new recipes and menus for the pastry section, with an emphasis on seasonality and local ingredients
- Ensure deliveries are put away promptly and stock is rotated using the First In First Out method, checking Use by Dates
- Assist the Head Chef with monthly stock takes, including accurate stock quantities, wastage, orders, deliveries and portion control
- Lead, support and develop chefs working within the pastry section, ensuring standards and procedures are consistently followed
- Attend and participate in team meetings and play an active role in the wider management and smooth running of the kitchen
We offer a sensible shift pattern, across a 45-hour working week (Monday to Sunday rota with two days off) with an OTE up to £17.25 per hour, £40,365.00 per annum, including non-contractual tronc (service charge). Part-time hours may also be considered.
