SUMI is entering an exciting new chapter with the opening of our second restaurant in the heart of Marylebone in November 2026. Created by renowned sushi master Endo Kazutoshi and part of Creative Restaurant Group, SUMI has earned a reputation for delivering exceptional Japanese cuisine inspired by authentic traditions, expert craftsmanship and genuine hospitality.

Following the success of our Notting Hill neighbourhood restaurant, SUMI Marylebone will be a gem in one of London's most exciting dining destinations showcasing the finest seasonal ingredients, the best sushi preparation and warm, welcoming service. We're looking for talented individuals to join our founding team from day one, help us bring this exceptional restaurant to life, and grow with us as we establish a new benchmark for Japanese dining in London.

The Role

As our Sushi Chef, you will be at the heart of our sushi kitchen, bringing precision, artistry and passion to every dish you create. You will work with only the finest, freshest fish and premium ingredients to prepare beautiful sushi that meets our exacting brand standards. Supporting the Head Sushi Chef and Senior Sous Chef, you'll master knife techniques, develop your sushi skills, and take pride in creating an exceptional experience with every plate. This is a brilliant opportunity for a chef who wants to perfect their craft, work with premium ingredients, and build a long-term career within an acclaimed restaurant group.

What You'll Be Doing

  • Preparing and producing sushi menu items to the required standard with precision and artistry
  • Assisting in sushi rice preparation, including washing, cooking, seasoning and maintaining correct holding conditions
  • Carrying out fish preparation tasks including trimming, slicing and portioning to exact specifications
  • Completing and maintaining mise en place for the sushi section before and throughout service
  • Always maintaining exceptional cleanliness and organisation of the sushi counter and prep areas
  • Ensuring all ingredients are correctly stored, labelled with dates and rotated using the first in, first out rule
  • Monitoring food quality and freshness standards, reporting any issues to senior chefs
  • Working efficiently during service, maintaining speed without compromising quality or presentation
  • Supporting stock organisation and assisting with deliveries and stock take
  • Following all food safety and hygiene procedures, particularly with raw fish and ready to eat products
  • Communicating clearly with senior chefs and team members during service
  • Attending training to continuously develop your sushi skills, knife techniques and product knowledge

What We're Looking For

  • Previous experience as a Sushi Chef or equivalent in a quality sushi kitchen, or strong foundational sushi skills
  • A genuine passion for sushi, precision and working with the finest, freshest fish
  • Excellent knife skills and attention to detail in preparation and presentation
  • Strong knowledge of food safety and hygiene, particularly with raw fish
  • The ability to work efficiently during high-pressure service without compromising quality
  • A collaborative, team-first attitude and professional approach with colleagues
  • Strong organisational skills and commitment to cleanliness and food standards
  • A willingness to continuously develop your sushi skills and product knowledge
  • Flexibility to work evenings, weekends and bank holidays

Salary: Up to £17.81 including service charge, plus benefits
