SUMI is entering an exciting new chapter with the opening of our second restaurant in the heart of Marylebone in November 2026. Created by renowned sushi master Endo Kazutoshi and part of Creative Restaurant Group, SUMI has earned a reputation for delivering exceptional Japanese cuisine inspired by authentic traditions, expert craftsmanship and genuine hospitality.

Following the success of our Notting Hill neighbourhood restaurant, SUMI Marylebone will be a gem in one of London's most exciting dining destinations showcasing the finest seasonal ingredients, the best sushi preparation and warm, welcoming service. We're looking for talented individuals to join our founding team from day one, help us bring this exceptional restaurant to life, and grow with us as we establish a new benchmark for Japanese dining in London.

The Role

As our Junior Sous Chef, you will be a key member of our kitchen leadership team, working closely with the Senior Sous Chef and Head Chef. You will open the kitchen daily, oversee food quality and presentation standards, mentor junior team members, and contribute to menu development. Your role is to ensure our operation runs smoothly, maintains our exacting brand standards, and delivers an exceptional dining experience with every plate.

What You'll Be Doing

  • Opening the kitchen daily and ensuring the team and kitchen are fully prepared for service
  • Preparing, producing and presenting all menu items to the highest quality, ensuring consistency across the team
  • Conducting daily ingredient inspections and managing daily and weekly stock takes to ensure adequate supplies
  • Testing food items for correct temperature and monitoring food wastage to maintain accurate stock records
  • Creating and communicating preparation and set-up sheets to the team, approving orders and ensuring they're placed on time
  • Mentoring, supervising and training junior team members in line with brand standards, and conducting kitchen briefings
  • Contributing to menu development and new dish creation, showcasing your creative flair with premium ingredients
  • Communicating regularly with the Head Chef, sharing guest feedback and driving continuous improvement
  • Maintaining exceptional kitchen cleanliness and organisation, ensuring full compliance with food safety requirements
  • Supporting cross-training across kitchen stations and building versatility within the team

What We're Looking For

  • Proven experience as a Chef de Partie or Sous Chef in a quality kitchen, with high volume high quality kitchen experiences is preferred.
  • Strong technical knowledge of cooking techniques, food safety and kitchen operations at a senior level
  • Natural leadership ability with proven experience mentoring and developing junior kitchen staff
  • A genuine passion for cooking, creativity and high standards with commitment to continuous improvement
  • Excellent organisational skills with experience in stock management, ordering and cost control
  • Strong communication skills, attention to detail and the ability to stay calm during high-pressure service
  • A collaborative, team-first attitude with meticulous personal hygiene and food safety standards
  • Flexibility to work evenings, weekends and bank holidays

Salary: Up to £45,000 p/a including service charge, plus benefits
