SUMI is entering an exciting new chapter with the opening of our second restaurant in the heart of Marylebone in November 2026. Created by renowned sushi master Endo Kazutoshi and part of Creative Restaurant Group, SUMI has earned a reputation for delivering exceptional Japanese cuisine inspired by authentic traditions, expert craftsmanship and genuine hospitality.
Following the success of our Notting Hill neighbourhood restaurant, SUMI Marylebone will be a gem in one of London's most exciting dining destinations showcasing the finest seasonal ingredients, the best sushi preparation and warm, welcoming service. We're looking for talented individuals to join our founding team from day one, help us bring this exceptional restaurant to life, and grow with us as we establish a new benchmark for Japanese dining in London.
The Role
As our Demi Chef de Partie, you will support the kitchen team in preparing and presenting our food to our exacting brand standards. You will work with the finest fresh ingredients to craft dishes that showcase authentic technique and refined presentation. Working closely with the Sous Chef and Head Chef, you'll develop your skills, mentor Commis Chefs, and take pride in creating a memorable dining experience with every plate. This is a brilliant opportunity for an ambitious chef who wants to master techniques, develop their culinary skills, and establish a strong foundation for career progression within an acclaimed restaurant group.
What You'll Be Doing
- Preparing and producing all menu items to the highest quality, according to recipes and brand standards
- Testing food items for correct temperature, maintaining quality and presentation standards throughout service
- Conducting daily ingredient inspections to ensure freshness and quality criteria are met
- Setting up and breaking down kitchen workstations and maintaining equipment
- Ensuring all ingredients are correctly stored, labelled with dates and rotated using the first in, first out rule
- Monitoring production charts and food wastage, reporting issues to the Chef to ensure accurate stock
- Maintaining exceptional kitchen cleanliness, including sanitising surfaces and equipment, and completing cleaning charts
- Supporting team members through guidance and assisting with delegated tasks
- Communicating with the kitchen team during service and attending daily briefings
- Participating in cross-training across different kitchen stations to develop versatility
- Attending training sessions to continuously develop your chef skills and knife skills
What We're Looking For
- Proven experience as a Demi Chef de Partie or Commis Chef in a quality kitchen
- A genuine passion for cooking, quality and working with fresh ingredients
- Strong knife skills and attention to detail in preparation and presentation
- Knowledge of food safety and hygiene standards
- A natural ability to learn and develop new techniques quickly
- Strong organisational skills and the ability to stay calm during service
- A collaborative, team-first attitude with colleagues and suppliers
- A willingness to mentor junior team members
- Flexibility to work evenings, weekends and bank holidays
Salary: Up to £15.51 including service charge, plus benefits
