We are seeking an experienced Chef de Partie to join the kitchen team at our Japanese restaurant in London. The successful candidate will take ownership of a designated section, ensuring consistently high standards of food quality, presentation, and service delivery.
Key Responsibilities
- Oversee the preparation and execution of dishes within an assigned section (e.g. robata, hot section, or sauces)
- Maintain consistency in taste, presentation, and portioning in line with restaurant standards
- Ensure all mise en place is completed to a high standard ahead of service
- Adhere to food hygiene, safety, and HACCP regulations at all times
- Support stock control, ordering, and waste management within the section
- Provide guidance and support to junior kitchen staff and commis chefs
- Liaise effectively with the Sous Chef and Head Chef to ensure smooth service
- Maintain a clean, organised, and safe working environment
Requirements
- Proven experience as a Chef de Partie, ideally within a Japanese or Asian culinary environment
- Sound knowledge of Japanese cuisine, ingredients, and techniques (sushi, robata, or teppanyaki experience advantageous)
- Excellent knife skills and strong attention to detail
- Ability to remain composed and efficient under pressure
- Comprehensive understanding of food hygiene and safety standards
- Strong communication and teamwork skills
