Alexander Steele Recruitment is working in partnership with a premium Scottish food business to recruit an experienced Sous Chef for one of its high-quality hospitality operations based in Moray. This is an exciting opportunity for a passionate and driven culinary professional to join a business renowned for its commitment to quality produce, sustainability, and exceptional customer experiences.
The Role
Reporting directly to the Head Chef, the Sous Chef will play a key role in leading the kitchen team, maintaining exceptional food standards, and supporting the development of innovative seasonal menus. This position requires a hands-on leader who thrives in a fast-paced environment and is passionate about delivering consistently high-quality dishes.
Key Responsibilities
- Culinary
- Prepare, cook, and present dishes to consistently high standards.
- Ensure recipes, presentation, and portion controls are followed across all kitchen sections.
- Support the development of new dishes, seasonal menus, and specials.
- Conduct quality checks and tastings to maintain consistency.
- Assist with food-to-go and ready meal offerings.
- Contribute to daily briefings, allergen updates, and menu communication.
- Support and lead the kitchen team during service.
- Assist with onboarding and training of new team members and apprentices.
- Build strong working relationships across kitchen and front-of-house teams.
- Help coordinate staffing and operational planning alongside the Head Chef.
- Promote a positive and professional kitchen culture.
- Ensure compliance with all food hygiene, allergen, and health & safety procedures.
- Maintain a clean, safe, and organised kitchen environment.
- Support audits, documentation updates, and operational compliance standards.
- Assist with ordering, stock rotation, inventory management, and stocktakes.
- Monitor waste and portion control to support profitability.
- Liaise with suppliers regarding shortages and product quality issues.
About You
- Previous experience as a Sous Chef or in a similar senior kitchen role.
- Strong understanding of food safety, allergen management, and kitchen operations.
- Experience working in a fast-paced professional kitchen environment.
- Excellent leadership, communication, and organisational skills.
- A passion for high-quality food and attention to detail.
- Flexibility to work shifts, including weekends and busy seasonal periods.
- Intermediate Food Hygiene certification.
