The Tudor Pass is our Michelin starred and 4 AA Rosette award winning restaurant located in The Great Fosters Hotel, in Egham. We are seeking to complete our team with an experienced and passionate Restaurant Manager. This intimate restaurant is a new chapter in the storied history of its location, named to celebrate the unique interactive service style diners can expect – without the noise of an open kitchen.
Since July 2025, The Tudor Pass has been led by Chef Stefano Di Giosia, formerly of The Fat Duck and KOL. His leadership marks the beginning of an exciting new culinary era for The Tudor Pass. Known for his passion for flavour, precision, and storytelling through food, Stefano crafts inventive tasting menus rooted in seasonality and locality, showcasing the finest ingredients – many grown just steps away in the estate’s own kitchen gardens and orchards. The Tudor Pass has only 7 tables, with the addition of the private Wine Room, 8 covers, open Wednesday – Saturday for both lunch & dinner. With its own dedicated team of Chefs, the entire focus is on creating memorable award‑winning dishes that amaze and delight our guests.
The Role
The Restaurant Manager will be responsible for managing a full‑time team of three to deliver outstanding standards of service. We are seeking someone with a passion for food, quality wine knowledge and service who will inspire and drive standards to great heights. Someone who possesses excellent team management and organisation skills to get the best out of the team. A Restaurant Manager with Michelin star experience is a definite advantage. The restaurant is open to residents and non‑residents so the manager must cater for a wide range of discerning clients with many regular patrons. Service for guests covers lunch and dinner Wednesday to Saturday, therefore the team has set days off each week. There are also set closure periods to allow for staff holidays, so the Restaurant Manager and the team get a well‑deserved rest.
Main Duties of the Restaurant Manager Include:
- Ensuring the restaurant is prepared for service
- Meeting and greeting guests
- Taking guest orders
- Effective rostering of employees
- Coaching employees to develop their skills and ensure service standards are met
- Serving food and beverage including alcoholic beverages and wines
- Completing satisfaction checks and acting on all feedback
- Resolving any service issues
- Presenting bills to guests and taking payment
- Ensuring the restaurant is reset at the end of the shift ready for the next service
- Ensuring the work area is clean and tidy before closing
- Working with the Head Chef to develop wine menus and wine pairings
- Selection and wine menu compilation together with stock taking and stock management
Requirements:
- Smart appearance
- Excellent communication skills with a passion for food and guest service
- Technical food and beverage knowledge to offer the required service and ability to develop the rest of the team
- Management/Supervisory experience within a Michelin Star food service hotel/restaurant required
- A passion for service and training with the ability to manage and motivate a team of waiters/esses & wine service staff to ensure excellence
- Must have your own transport due to semi‑rural location
