Responsible for: Junior Sous Chef/Breakfast Chef, Chef De Partie, Commis Chefs & Kitchen Porters

Hours of work: 46 hours per week

Aldwark Manor Estate is a privately owned Hotel with Golf nestled in a picturesque village between York and Harrogate. Set in 200 acres of beautiful countryside, this luxury Hotel provides a complete escape for both business and leisure guests and is a popular venue for weddings. In recent years, the hotel has undergone significant investment and renovation, transforming the bedrooms, restaurant, residents’ lounge, sports bar and all public areas to deliver a refined and contemporary guest experience. December marked the completion and opening of the new Salus Spa facilities, further enhancing the estate’s luxury leisure offering. The next phase of development will see the addition of new bedrooms, expanded event spaces and additional treatment rooms, all scheduled to open later this year.

Main purpose of the role: As a Sous Chef you will be overall responsible for supporting the Head Chef in the day to day running of the Kitchen and its staff in the absence of the Senior Sous Chef and the Head Chef. Directing kitchen activities for the junior members and ensuring the preparation of our delicious food - helping create memorable experiences for guests - whenever and wherever they dine. You will support the Head Chef with food preparation, menu preparation, inspire and monitor the junior team in the absence of the Senior Sous Chef and the Head Chef. The main purpose of the role is to be a supportive role model, ensuring smooth workflow and running of the kitchen all while maintaining high standards of food quality and presentation. This role also includes supporting with all things Health and Safety.

You will Support the Head Chef in these main duties:

  • Controlling and directing the food preparation process.
  • Managing and working closely with junior Chefs to develop and lead them.
  • Food ordering to minimise waste of resources.
  • Menu Development, this requires excellent cooking skills with a strong understanding of produce, ingredients and cost of ingredients.
  • Strong communication skills through a variety of means: departmental meetings, HOD meetings in the absence of the Senior Sous Chef or the Head Chef, Function sheet meetings, Health and Safety meetings etc.
  • Flexible and adaptable, with the ability to stay calm under pressure, adapting your approach to complete routine and non-routine tasks.
  • Cleaning and organising food preparation areas.
  • Ensuring that the Due Diligence tasks are being carried out correctly.
