Responsible for: Sous Chefs, Junior Sous Chef/Breakfast Chef, Chef De Partie, Commis Chefs & Kitchen Porters

Hours of work: 46 hours per week

Aldwark Manor Estate is a privately owned Hotel with Golf nestled in a picturesque village between York and Harrogate. Set in 200 acres of beautiful countryside, this luxury Hotel provides a complete escape for both business and leisure guests and is a popular venue for weddings.

In recent years, the hotel has undergone significant investment and renovation, transforming the bedrooms, restaurant, residents’ lounge, sports bar and all public areas to deliver a refined and contemporary guest experience. December marked the completion and opening of the new Salus Spa facilities, further enhancing the estate’s luxury leisure offering. The next phase of development will see the addition of new bedrooms, expanded event spaces and additional treatment rooms, all scheduled to open later this year.

We are currently seeking a highly skilled and motivated Hotel Head Chef to join our team at Aldwark Manor Estate. The ideal candidate will have a strong foundation in culinary arts, cooking techniques, food safety and kitchen management. This role is responsible for Elements Restaurant, Salus Spa and Bunkers Kitchen, working with other chefs to deliver breakfast, lunch, functions and dinner across our three different Restaurants. This is a Multi-site role; a chef with similar experience is ideal but not essential.

Purpose of the role: As Hotel Head Chef you will be overall responsible for the day to day running of the Kitchens including Elements Restaurant (our main Hotel Restaurant), Bunkers (our Sports Bar) and Squadran Bar (our main Hotel lounge) and its staff. Directing and delegating kitchen activities ensuring the preparation of our delicious food - helping create memorable experiences for guests - whenever and wherever they dine.

As Hotel Head Chef, you are expected to oversee the preparation of all food, create menus using seasonal ingredients, inspire and monitor the junior team, and lead by example. The main purpose of the role is to be a leader, a supportive role model for all kitchen staff, who ensures the smooth workflow and running of the kitchen, all while maintaining high standards of food quality and presentation. This role also includes ensuring that all kitchen staff members are following all the Food Safety and Health and Safety policies and procedures.

The main duties of the Hotel Head Chef include:

  • Controlling and directing the food preparation process ensuring food safety standards and quality standards are met.
  • Managing and working closely with junior Chefs to develop and lead them.
  • Food ordering to minimise waste of resources.
  • Managing the stock levels, ensuring that any stock bought for bespoke functions is used up before it expires to avoid food waste.
  • Menu and Recipe Development, requiring knowledge of food, excellent cooking skills and a strong understanding of produce, ingredients and cost of ingredients.
  • Writing allergens for the dishes on the menus.
  • Strong communication skills through a variety of means: departmental meetings, HOD meetings, Function sheet meetings, Health and Safety meetings, clear instructions for the junior chefs etc.
  • Flexible and adaptable, with the ability to stay calm under pressure, adapting your approach to complete routine and non-routine tasks.
  • Leading by example and keeping the kitchen and all food preparation areas clean.
  • Ensuring that the Due Diligence tasks are being carried out correctly.
