Established city centre Cafe/Bistro is seeking to recruit an experienced Head Chef to take responsibility for all operational procedures within the establishment's busy restaurant and function suites. Ideal candidate will have a number of years previous experience in the capacity of Head Chef or Senior Sous Chef in a busy restaurant environment.
Main Responsibilities:
- To plan menus in order to achieve and maintain the budgeted food cost.
- To purchase or requisition supplies and ensure that these are properly issued, used and accounted for.
- To carry out food rotation procedures.
- To supervise kitchen staff in the cooking of dishes, giving technical advice and guidance when necessary.
- To ensure that dishes are produced to the required standard of quality before serving.
- To instruct Trainees in food preparation and kitchen operations.
- To assist in the recruitment, training and development of all food production.
- To liaise with suppliers to ensure the supply and delivery of quality goods.
- To carry out stock takes as appropriate.
- To ensure compliance with Statutory and Company regulations with regard to health, safety, hygiene and fire.
- To maintain discipline of staff under your control.
- To promote and maintain good communication with all departments.
- To attend meetings when required.
- To apply the health and safety policy within your departments and ensure that day to day standards are maintained and observed by all staff under your control.
- To carry out any other duties that might reasonably be required.
The successful candidate will work an average of 40 - 45 hrs per week (5 out of 7 Days). An excellent remuneration package, company pension and excellent working conditions on offer for successful candidates. Hours of work - 8am - 6pm. Salary - £36k - £38k.
