A key role in a kitchen that’s evolving. At The Albion Hotel, Freshwater Bay, we’re entering a new chapter — with a renewed focus on food, standards, and team culture. As Sous Chef, you’ll work closely with the Head Chef to help shape a kitchen that’s consistent, well‑run, and something people are proud to be part of. This is a hands‑on leadership role in a busy environment — where you’ll support the team day‑to‑day, drive standards, and help deliver food that’s simple, seasonal, and done exceptionally well.
What you’ll do:
- Help to coordinate and direct all core culinary activities within The Albion Hotel and other assigned locations.
- Help the Head Chef to manage and control services to meet performance, qualitative, and financial targets.
- Drive revenue opportunities through commercial initiatives, labour efficiency, and effective operations.
- Ensure exceptional food hygiene, health, safety, and environmental practices.
- Lead, support and develop junior chefs within the brigade.
- Contribute to menu development, seasonal dishes and specials.
- Help drive efficient, well‑structured service during busy periods.
What you bring:
- NVQ Level 2 Food Production certificate or equivalent.
- Intermediate Food Hygiene certificate.
- Strong literacy and numeracy skills.
- Proven experience as a Sous Chef or strong Senior Chef ready to step up.
- Excellent communication and interpersonal skills, fostering effective teamwork.
- Flexibility to work under pressure and across various shifts and service times.
- Direct management experience of chefs and kitchen brigade.
- Strong leadership abilities, setting and maintaining high standards.
- Proficient in time management and organisational skills.
- Analytical problem‑solving skills, with the ability to implement innovative solutions.
- PC literate.
- Advanced Food Safety or Health and Safety qualification.
- A genuine passion for food, produce, and hospitality.
- A collaborative approach and commitment to team culture.
