As Sous Chef, you'll work closely with the Head Chef to help shape a kitchen that's consistent, organised, and something the whole team is proud to be part of. This is a hands-on leadership role in a busy environment, where you'll support the brigade day-to-day, drive standards, and help deliver food that's simple, seasonal, and exceptionally well executed.
What you'll be doing:
- Supporting the Head Chef in the day-to-day management of kitchen operations
- Coordinating and directing core culinary activities across The Albion Hotel and other assigned locations
- Assisting in delivering service standards that meet operational, financial, and quality targets
- Helping drive labour efficiency, operational performance, and commercial opportunities
- Leading, mentoring, and developing junior chefs within the brigade
- Contributing to menu development, seasonal dishes, and daily specials
- Maintaining exceptional standards of food hygiene, health & safety, and cleanliness
- Supporting smooth, well-organised service during busy periods
- Helping create a positive, professional, and collaborative kitchen culture
What we're looking for:
- Proven experience as a Sous Chef or a strong Senior Chef ready to step into a leadership role
- NVQ Level 2 Food Production (or equivalent)
- Intermediate Food Hygiene Certificate
- Experience managing and supporting a kitchen brigade
- Strong leadership and communication skills
- Excellent organisation and time management abilities
- Ability to remain calm and effective under pressure
- Analytical and practical problem-solving skills
- Strong literacy, numeracy, and basic computer skills
- Flexibility to work across varying shifts and service patterns
- A genuine passion for food, produce, and hospitality
- A collaborative approach with a commitment to team culture and standards
Desirable:
- Advanced Food Safety or Health & Safety qualification
- Experience within hotel or high-volume kitchen environments
