Alba Restaurant is looking for an experienced Sushi Chef de Partie to join our new Omakase concept in our 2 AA Rosette restaurant, opposite Harrods in Knightsbridge.
Working alongside our Japanese Head Chef, you will prepare and deliver high-quality sushi using seasonal ingredients, traditional Japanese techniques and precise presentation. This is an opportunity to help shape a new Omakase offering within an established restaurant.

Your role: Manage the sushi section, from mise en place through to service
Prepare fish, sushi rice and other ingredients to consistently high standards
Deliver precise preparation and presentation throughout each Omakase sitting
Work closely with our Japanese Head Chef and senior kitchen team
Maintain a clean, organised and efficient workstation
Follow HACCP, food safety and kitchen hygiene procedures
Work with the kitchen and front-of-house teams to deliver an exceptional guest experience
Contribute ideas as we develop our new Omakase menu
About you: Experience as a Sushi Chef de Partie, Sushi Chef or in a similar role within a high-quality Japanese restaurant
Strong sushi preparation skills and knowledge of Japanese ingredients and techniques
Excellent knife skills and experience in fish preparation
An interest in Omakase and a precise approach to presentation
Ability to work calmly and consistently during busy services
Good communication skills and a positive, reliable approach
Strong knowledge of food safety and kitchen hygiene
Enthusiasm for learning and developing under our Japanese Head Chef
