ROLE PURPOSE

You will own Mitsu's private and group business. The moment someone shows interest in our private dining, a karaoke room, a terrace takeover, a full buyout or a Christmas party, you're on it. You'll turn the enquiry into a confirmed, deposited booking, then build it into the best (and most valuable) version of that event by selling food, drinks and experiences with confidence and flair. You'll also go out and find the business that isn't coming to us yet, and make sure every event is handed over to the operation perfectly so our guests book again.

KEY RESPONSIBILITIES

Enquiry management and conversion

  • Own every private dining, group 10+ guests, exclusive hire, buyout and festive enquiry from first contact to confirmed booking, responding within [2] working hours.
  • Qualify each enquiry quickly (occasion, numbers, budget, date flexibility, decision-maker) and recommend the right space, menu and format.
  • Host show rounds and tastings that sell the whole Mitsu experience, not just the room.
  • Prepare tailored proposals, contracts and invoices, and secure signed contracts and deposits in line with our terms and conditions.
  • Manage provisional holds, follow-ups and release dates so no space sits unsold and no enquiry goes cold.

Upselling and maximising revenue

  • Sell beyond the minimum spend at every opportunity: drinks packages, sake and whisky flights, welcome cocktails and Champagne, upgraded menus, late-night and DJ packages, karaoke, cakes, flowers, branding and AV.
  • Cross sell the wider Aethos offer, including bedrooms for event hosts and guests and our members club.
  • Work with the Director of Sales & Marketing and Finance on minimum spends, pricing and packages, and yield our spaces so the best dates go to the highest-value business.
  • Drive need periods (early week, lunchtimes, January and February) with targeted offers and campaigns.

Business development

  • Build and manage a strong pipeline of corporate, agency and social business, with a focus on Shoreditch, the City and the creative, tech, media and fashion industries on our doorstep.
  • Prospect proactively through calls, LinkedIn, networking, sales blitzes and showcase evenings.
  • Develop relationships with event agencies, venue-finders, PAs and EAs, and manage our listings on venue-booking platforms.
  • Look after repeat bookers as key accounts and rebook annual events early.

Festive season

  • Lead Mitsu's Christmas and New Year's Eve sales, including packages, pricing, target lists, collateral (with Marketing) and a rebooking plan for the following year.
  • Track festive pace against target weekly and act early on any gaps.

Event planning

  • Produce accurate, timely function sheets covering menus, timings, dietary and allergen requirements, set-up and billing, and brief them in at weekly operations meetings.
  • Be the client's single point of contact from booking to event day, and greet key clients on arrival where appropriate.
  • Make sure final bills are accurate and settled, gather feedback after every event, and turn happy hosts into repeat bookings and referrals.

Systems, reporting and compliance

  • Keep CRM / events system accurate and up to date, including every enquiry, status and lost business reason.
  • Report weekly on pipeline, conversion, pace against budget and lost business, and contribute to monthly forecasts.
  • Keep a close eye on the competitive set and bring ideas on product, pricing and packages.
  • Follow our policies on deposits, cancellations, data protection, licensing and allergen information.

How success is measured

  • Private dining, group, buyout and festive revenue against monthly and quarterly targets
  • Enquiry-to-booking conversion rate and response times
  • Pre-sold add-on revenue and average spend per head on events
  • Contracts and deposits secured in line with our terms
  • Repeat and referral business
  • Guest feedback on events

About you

Essential

  • At least 1 years' experience in restaurant, bar, hotel or venue sales or events, ideally in London.
  • A natural seller: confident, warm and persuasive, able to upsell without ever feeling pushy.
  • Excellent written communication, with proposals and emails that make people want to book.
  • Fast, organised and detail-driven, comfortable juggling a busy inbox and a full diary.
  • Confident using CRM or event booking systems and spreadsheets.
  • Flexible to work some evenings and weekends.
  • The right to work in the UK.

Desirable

  • An existing network of corporate bookers, PAs or agencies in East London and the City.
  • A genuine love of Japanese food and drink; sake knowledge or a WSET qualification is a bonus.
  • Experience with Seven Rooms
