ROLE PURPOSE

The Demi Chef de Partie supports the Chef de Partie in the preparation and cooking of dishes across the kitchen, helping to maintain the high standards of Mitsu’s Japanese cuisine. This is a hands-on role designed for a developing chef to build technical skills, consistency, and efficiency while contributing to the overall quality of service.

You will be a visible presence in the kitchen, calm under pressure, generous with knowledge, and deeply committed to quality, consistency, and culture.

KEY RESPONSIBILITIES

Cooking & Preparation

  • Assist the Chef de Partie in preparing, cooking, and presenting dishes according to Mitsu’s standards.
  • Maintain proper mise en place and readiness of your station for service.
  • Learn and execute Japanese culinary techniques, including general kitchen specialties; work with Robata grilled items as part of integrated station duties.
  • Follow recipes and instructions accurately while maintaining consistency and quality.

Section Support & Teamwork

  • Support the smooth operation of your assigned station during service.
  • Assist in the training of junior staff and Commis chefs under the guidance of your Chef de Partie.
  • Communicate effectively with colleagues to ensure coordinated and efficient service.

Quality & Standards

  • Maintain high standards of hygiene, cleanliness, and food safety at all times.
  • Monitor ingredient quality and report any issues to your Chef de Partie or Senior Chef.
  • Contribute to Mitsu’s zero-waste philosophy by using ingredients efficiently and minimizing waste.

Development & Learning

  • Continuously improve technical skills and knowledge of Japanese cuisine.
  • Learn from Senior CDPs and the Head Chef to progress toward Chef de Partie responsibilities.
  • Participate in team meetings, briefings, and training sessions.

Required Skills & Qualifications:

  • Previous experience as a Demi Chef De Partie or equivalent, ideally in a Japanese or Asian kitchen.
  • Basic knowledge of cooking techniques, food hygiene, and kitchen operations.
  • Interest in developing skills in Japanese cuisine and integrated techniques such as Robata grilling.
  • Ability to work in a fast-paced, high-volume environment.
  • Team player with good communication and organizational skills.
  • Commitment to quality, consistency, and sustainability.
