The Role

As our Breakfast Chef, you own the most important meal of the day.

You'll lead breakfast from prep to plate, delivering fresh, seasonal, beautifully executed dishes that set the tone for every guest's day.

It's an early-start role with real ownership: your section, your standards, your service.

Key Responsibilities

  • Own daily mise en place and prep, ensuring the breakfast section is fully set up and service-ready ahead of opening.
  • Cook and plate à la carte and buffet breakfast items to brand specification, consistently, at pace, and to a high standard.
  • Manage the breakfast buffet: replenishment, presentation, freshness and waste control throughout service.
  • Prepare and deliver in-room breakfast orders accurately and on time.
  • Uphold food safety at all times: HACCP, allergen management and labelling, temperature controls and due-diligence records.
  • Maintain impeccable kitchen cleanliness and full compliance with food hygiene and EHO standards.
  • Liaise with suppliers and upscale any quality or supply issues to the Head Chef.
  • Work hand-in-hand with the front-of-house team to deliver a smooth, warm guest experience.
  • Contribute ideas to breakfast and weekend brunch menus, seasonal specials, and strong vegetarian, vegan and dietary options.
  • Support and where needed supervise and train commis chefs on shift.
  • Cover other kitchen sections and duties as reasonably required.

About You

  • Proven experience as a Breakfast Chef or Chef de Partie in a hotel, restaurant or high-quality, high-volume kitchen.
  • Confidence running a section independently, especially under early‑morning time pressure.
  • Strong breakfast cookery skills, eggs cooked every style, grill, continental and fresh bakery items.
  • Sound food safety knowledge and a current Food Hygiene Level 2 certificate.
  • Good working knowledge of allergens and dietary requirements.
  • A genuine team player with clear communication.
  • Flexibility to work weekends and bank holidays on a rota
