- ROLE PURPOSE
The Assistant Food & Beverage General Manager supports the Food & Beverage General Manager in leading the overall food and beverage operation across all outlets at Aethos London Shoreditch.
Where Outlet Managers own the week within their own venue, this role is accountable for the department as a whole that every outlet delivers consistently, to standard, and to budget.
Working closely with Outlet Managers, the Kitchen leadership team, and other hotel departments, the role drives operational excellence, develops the management team, and deputises for the Food & Beverage General Manager as required.
KEY RESPONSIBILITIES
- Leadership & Operations
- Support the Food & Beverage General Manager in overseeing the operation of all food and beverage outlets, ensuring exceptional service standards and operational excellence.
- Act as the Food & Beverage General Manager in their absence, ensuring the smooth running of the entire department.
- Lead, coach, and inspire Outlet Managers and Supervisors to deliver outstanding hospitality and memorable guest experiences.
- Lead daily operational meetings and communicate key business priorities across the department.
- Maintain exceptional standards of cleanliness, presentation, and service across all food and beverage venues.
- Guest & Member Experience
- Champion a guest-first culture, ensuring every interaction reflects the Aethos approach to lifestyle hospitality.
- Own department-wide guest feedback trends and repeat issues, turning them into practical improvements across outlets.
- Build strong relationships with hotel guests, members, and local clientele to enhance loyalty and engagement.
- Commercial Performance
- Support the achievement of departmental budgets, revenue targets, and profitability goals across all outlets.
- Monitor labour costs, productivity, payroll, and scheduling to maximise operational efficiency.
Oversee stock control, purchasing, inventory, and wastage against agreed cost targets.
- Identify opportunities to grow revenue through service initiatives, promotions, and seasonal activity.
- People & Development
- Coach, mentor, and develop Outlet Managers through regular feedback, one-to-ones, and performance reviews.
- Support recruitment, onboarding, succession planning, and retention across the Food & Beverage division.
Ensure all colleagues receive the training and certification required to maintain exceptional service standards.
- Promote engagement, wellbeing, and an inclusive working environment, partnering closely with People & Culture.
- Standards & Compliance
- Ensure compliance with health & safety, food safety, licensing, and company policies across the department.
- Own and continuously improve Standard Operating Procedures across all outlets.
- Conduct regular operational audits to ensure brand standards are consistently achieved.
- Collaboration
- Work closely with the Executive Chef, Hotel Operations, Sales & Events, Finance, and People & Culture to ensure seamless collaboration across the hotel.
- Support the planning and execution of events, activations, and seasonal initiatives that enhance the Aethos guest experience.
ABOUT YOU
Essential
- Proven experience as an Assistant Food & Beverage General Manager, Senior Food & Beverage Manager, or similar multi-outlet leadership role within a luxury hotel, lifestyle hospitality brand, restaurant or members' club.
- Strong leadership presence, with a track record of developing managers rather than only front-line teams.
- Commercially confident across budgets, labour costs, payroll, stock control, and departmental P&L.
- Strong understanding of food safety, health & safety, licensing, and compliance requirements.
Desirable
- Experience within lifestyle, boutique, or members' club environments.
- Experience opening, launching, or repositioning a food and beverage operation.
- Personal Licence, Level 3 Food Safety, or First Aid at Work.
