An exciting opportunity has arisen to join the MITSU family as a Head Waiter for the launch of one of Shoreditch’s most exciting new restaurant openings. MITSU is where East London meets East Tokyo, a bold new concept inspired by the vibrant neighbourhood izakayas of Tokyo and the creativity and energy of Shoreditch. Our cuisine celebrates the craft of Robata fire cooking, razor‑sharp Japanese technique, and dishes designed to be shared. Alongside the food, our izakaya bar brings high energy with crafted cocktails, flowing sake, mizuwari tankards, and vinyl‑fuelled DJ sessions that carry the atmosphere late into the night.

We are looking for an experienced Head Waiter to help lead the floor team and deliver exceptional hospitality from day one.

What you'll be doing:

  • Leading a section during service and ensuring a seamless guest experience
  • Supporting and mentoring the waiting team during busy services
  • Delivering knowledgeable and engaging service with strong menu awareness
  • Working closely with the management, bar, and kitchen teams
  • Maintaining high standards of service and guest care

What we're looking for:

  • Previous experience as a Head Waiter or Senior Waiter in a quality restaurant
  • Passion for hospitality and guest experience
  • Strong food and beverage knowledge
  • Confidence working in a fast‑paced, high‑energy environment
  • A positive, team‑focused attitude
