The Role

Aethos London Shoreditch hosts the moments that matter, creative launches and press days, board meetings and offsites, private dinners, celebrations and full buyouts. Once the business is on the books, you are the person who makes it happen: on the floor, sleeves rolled up, leading the food and beverage delivery from the first table laid to the last glass cleared. This is a hands-on role first and foremost. You will be setting the room with your team, briefing them, running the service, working the pass with the kitchen and pouring the wine, not watching from the side of the room. Your standards are the team's standards, and they will learn them from watching you work. Alongside events, you are accountable for our In-Room Dining team, looking after guests in our 164 bedrooms through to last orders at 11pm. It is a natural pairing: both are about delivering a considered food and beverage experience away from the restaurant floor, to the minute and to the detail.

Key Responsibilities

  • Set up, run and break down every event alongside your team, rooms laid, service led from the floor, standards held from the first table to the last glass.
  • Lead food and beverage service at events: brief the team, run the sections, work the pass with the kitchen and keep the timings tight.
  • Own food and beverage standards across events and In-Room Dining – sequence of service, menu and drinks knowledge, allergens, presentation and train the team on them, on shift.
  • Work hand in hand with the Head Chef and Bar Manager on menus, timings and execution.
  • Lead the In-Room Dining team through to last orders at 11pm: order taking, delivery times, tray and trolley presentation, amenities and VIP requests.
  • Lead the weekly BEO meeting and turn client requirements into a clear plan with Kitchen, Front Office, Housekeeping and Maintenance.
  • Recruit, train and develop both teams, and build rotas that match the team to the business on the books.
  • Manage stock, cellar, glassware, linen and equipment, and control breakage, loss and waste.
  • Deliver cost of sale and payroll to budget across events and In-Room Dining.
  • Keep both operations compliant on food safety, HACCP, allergens, licensing and health and safety.

About You

  • Hands-on food and beverage management experience in a hotel or quality venue – banqueting, events, restaurant or bar.
  • Genuinely hands-on: first in to set the room, last out after the clear-down, and leading service by doing it.
  • Strong food and beverage craft, sequence of service, wine and cocktail knowledge, and an eye for presentation and detail.
  • In-Room Dining, restaurant or bar experience, and the confidence to lead a service team on the floor.
  • Fluent with function sheets, set-ups, floor plans and turnarounds to time.
  • Comfortable with the numbers that matter operationally – cost of sale, labour, stock and waste.
  • Strong on food safety, allergens and health and safety.
  • Calm and credible in front of a client when something needs solving mid-event.
  • Happy to work the evenings and weekends our events and In-Room Dining operation needs.

If you pride yourself on working ethically, with integrity and have a passion for making things happen then please apply today! All applicants must be eligible to live and work in the United Kingdom. Documented evidence of eligibility will be required.
