As Head Chef, you will lead and define the culinary direction of a newly renovated country pub aiming for exceptional dining experiences. You will partner with an owner who has extensive experience in F&B to create a differentiated menu that combines seasonal, locally sourced ingredients with refined technique and outstanding service.

Key Responsibilities
  • Develop and execute a compelling fine-dining menu within a country gastro-pub framework.
  • Lead, mentor and manage the kitchen team; recruit, train, and retain top talent.
  • Oversee all kitchen operations: mise en place, service, plating, and quality control.
  • Manage food costs, portion control, menu costing, and budgeting to maximise profitability.
  • Menu development in line with seasonal, local produce and wine pairings.
  • Maintain exceptional food safety and HACCP standards; ensure all legal compliance.
  • Collaborate with the owner on F&B strategy, wine programme, and guest experience.
  • Drive supplier relationships, sourcing, and sustainable practices.
